Chaine USA INDUCTION CEREMONY: BAILLIAGE OF LAS VEGAS
Award-winning chef Michel Richard, acclaimed for “Citronelle” and “Central Michel Richard” in Washington, D.C., and “Central at Caesars Palace”,Las Vegas, teamed with Chef Allesandro Stratta, whose “Alex” at Wynn Resort received two Michelin stars and the AAA’s coveted Five-Diamond designation.
Cleveland Clinic Lou Ruvo Center for Brain Health, designed by world-famous architect Frank Gehry, provided the spectacular setting. Guests strolled through snow-covered evergreens to the reception, where they enjoyed a fine selection of Champagne Pommery Brut Royal and prestigious American wines.
The chefs shared the hors d’oeuvre presentation as they did the menu courses.
Chef Stratta began with seared scallops. Accompanying the dish was 2009 Hattenheimer Nussbrunnen Riesling Kabinett from Langwerth von Simmern in Germany’s Rheingau. Savory, rich walnut-crusted salmon, reflecting the winter season with curried butternut squash and spice-roasted apples were served next. It was perfectly-paired by 2007 Emeritus Pinot Noir from William Wesley Vineyard in Sonoma.
Chef Richard debuted with melt-in-your-mouth roasted Muscovy duck breast with a sweet-spicy cinnamon beet sauce. Two red wines provided contrast: a 2007 Crozes-Hermitage from the well-respected Rhône Valley producer, Jaboulet Aîne et Fils and from the Napa Valley, a robust, rich 2007 Biale Zinfandel from Monte Rosso Vineyards.
